The First Step in Making Cannabis Cookies: Cannabutter

All good cannabis cookies begin with cannabutter. Cannabutter is simply butter with decarboxylated cannabis mixed into it. It’s really the only complicated part of the whole process.

First Decarb. Raw cannabis does not contain THC until it has been exposed to heat for an extended period of time. Therefore, it is necessary to decarb your cannabis prior to using it in your recipes.

Step #1: Grind the cannabis loosely and put it onto a baking sheet that has been covered in parchment paper. Place the baking sheet in your oven at 220°F for 45 minutes. Remove the baking sheet from your oven and let it cool completely. Now your cannabis is ready to be turned into cannabutter.

To make cannabutter:

* 250g (9 oz) of unsalted butter * 5-7 grams of decarboxed cannabis (you can adjust this amount based upon your preferred level of potency.) * 250 ml (8.4 fl oz.) of water (this helps prevent the butter from burning.)

Place the butter and water in a pan over extremely low heat. Add the cannabis and maintain a temperature of 122-140° F for 2-3 hours. Do NOT let it boil. Strain the mixture through cheesecloth into a container. Allow the mixture to cool and become solidified in your refrigerator. The cannabutter will float to the surface when cooled; therefore, you should dispose of the water beneath the butter. That which remains is your cannabutter and it is ready to use like normal butter in any recipe.

Classic Cannabis Chocolate Chip Cookies

These cookies will produce 18-20 cookies. With 7g of flowers at 15% THC, each cookie will contain approximately 8-10 mg THC before accounting for baking loss — please be cautious and test one cookie prior to consuming additional.

Ingredients:

* 115g (4 oz.) of cannabutter (must be room temperature) * 100g (3.5 oz.) of granulated sugar * 100g (3.5 oz.) of light brown sugar * 1 large egg * 1 tsp of vanilla extract * 190g (6.7 oz.) of plain flour * 1/2 tsp of bicarbonate of soda * 1/2 tsp of fine salt * 175g (6 oz.) of dark chocolate chips

THC Levels

Cannabis used Est. THC per batch Est. THC per cookie (18 cookies)
5g flower at 10% THC ~400mg after losses ~22mg
7g flower at 15% THC ~750mg after losses ~42mg
3g flower at 20% THC ~480mg after losses ~27mg
1g concentrate at 70% ~560mg after losses ~31mg

Baking reduces potency by approximately 20–30%. Figures above reflect estimated post-bake THC.

It may be best to begin by making half a cookie if you’re unsure how your body will react. Cookies are generally denser and fattier than gummies so they have an onset that is usually much longer as well as an effect that can last significantly longer (usually at least 1.5 hours) before you would consider eating another.

Important Things To Remember

  1. If there’s anyone else who cooks/bakes with you or lives in your house, you need to label everything you make. Your homemade cannabis cookies could easily be mistaken for real cookies. Store all your cannabis products in separate containers and label each container so everyone knows what’s inside. This is extremely important.
  2. Baking evenly sized cookies is just as important as labeling. If your cookies are irregularly shaped, you won’t know exactly how much THC is going into each person. Measure out the portions using either a measuring cup or a digital kitchen scale.
  3. Cannabutter makes great storage in the fridge. When you make a large batch, you can store it in the refrigerator for up to two weeks or freeze it for three months. Having cannabutter already made means you can make new batches quickly and efficiently, usually within 20 minutes.

Homemade cannabis cookies are genuinely one of the most enjoyable ways to consume — controllable, familiar, and far better than anything produced in a commercial kitchen if you get the recipe right.
